For those of you who celebrate Easter, whether as a religious holiday or a time for new beginnings, there are many ways to make Easter a special time in Las Vegas. Here are some suggestions for enjoying this time (and an excuse not to continue your spring housecleaning).
On
the famed Las Vegas Strip, Strip House inside Planet Hollywood Resort &
Casino’s Easter menu appetizer consists of grilled asparagus salad topped
with Stilton cheese and drizzled in pancetta vinaigrette ($15). Roasted loin
of lamb accompanied by mint Israeli cous cous, peas and roasted carrots
($39) serves as the entrée addition. In addition, Strip House’s complete ala
carte menu will be available. The menu includes prime cuts of beef
accompanied by side dishes of black truffle creamed spinach, goose fat
potatoes and creamed corn with pancetta. Warm strawberry rhubarb tart with
vanilla ice cream and toasted almonds ($12) or Strip House’s famed 24-layer
chocolate cake will be available for dessert.
Strip House was recently recognized as one of the top ten new restaurants in Las Vegas by Citysearch and Zagat’s Best of Las Vegas 2008. Strip House is open 5 – 11 p.m. Sunday – Thursday and 5 – 11:30 p.m. Friday – Saturday.

In
the southwest, the Silverton Casino Lodge Seasons Buffet just added an
Easter Menu of Citrus rotisserie chicken, roasted turkey with apple-sausage
stuffing and grilled lamb chops with rosemary, roasted garlic and honey
glaze are traditional favorites sure to please this holiday. Shrimp bisque
and Thai coconut lemon grass chicken will be available at the soup station.
Seasons Buffet’s breakfast pizza comes in many forms including sausage, egg and Swiss cheese, apple cinnamon with strudel or bacon and mushroom. For the seafood lovers, snow crab legs with whole grain mustard sauce, shrimp cocktail, stuffed crab, seafood cioppino, steamed crab legs with drawn butter, bay scallops in an orange-basil sauce and assorted sushi with wasabi, pickled ginger and soy will be available.

At the carving station, guests can choose from honey glazed ham, Montreal rub crusted prime rib of beef and juniper-maple smoked salmon. Patrons craving lighter fare can stop at the salad station for wild rice with dried fruits and nuts, antipasti, a smoked seafood platter with cream cheese, asparagus with prosciutto and red peppers and oil cured olives. Other decadent delights include osso bucco, chicken cacciatore, walnut shrimp, Kung pao beef, stir-fried pepper crab claw and hoisin glazed confit duck legs.
Seasons Buffet’s special menu will feature hot cross buns, chocolate covered strawberries and assorted muffins, pastries, cookies and cakes.
Seasons’ Easter menu is $19.95 per person and is only available on Easter day, Sunday, March 23 from 11 a.m. – 9 p.m.

On
restaurant row, Morton’s The Steakhouse in Las Vegas is best known for
serving USDA prime beef, but guests can satisfy their taste
for a traditional Easter classic by ordering Morton’s Domestic Double Rib
Lamb Chops.
“There’s no question that lamb chops are very popular during the Easter season,” said Morton’s Executive Chef Lee Rizzo. “Lamb chops are best when they’re fresh and simply prepared, which also makes them an ideal entrée to serve at home when you can’t dine at Morton’s.”
Rizzo offers these tips for preparing lamb chops at home:
| * | Use double-cut loin lamb chops, like Morton’s does, because they’re thick and juicy. | ||
| * | Look for good marbling in the eye (the thick part of the meat). | ||

There should be about 1/8 of an inch of white fat on the outside of the lamb chop and the fat should be firm and smooth. |

| * | Morton’s features American lamb on its menu, but lamb from New Zealand and Australia is also very good. | ||
| * | The lamb chops should be frenched, which means the meat should be trimmed about 1/2 –inch from the eye of the meat to the end of the bone. Most butchers will do this for you. |
