There isn't a Jew who doesn't know

That eating Matzoh won't let you 'go'

Even with your morning cup o' Joe
It's no dough ... no 'go'
But even so
My family and I
Cannot deny
It's just isn't Passover without Matzo Brei
 

  1 matzo cracker

  1 egg

  salt and pepper to taste

  1 teaspoon vegetable oil

  1. Take the matzo and break into small pieces into a bowl. Cover with hot water for a minute. Then squeeze out the water.

  2. In a small bowl, beat one egg with salt and pepper to taste and add to matzo Mix well.

  3. Heat frying pan with a little oil. Pour mixture into the pan. Brown one side and turn over. Fry until golden brown.

  4. Variations include adding other ingredients: mushrooms, onions, anything else you would put in an omelet.
