Charlie Palmer Steak
R enowned Chef Charlie Palmer is one of the pioneers of progressive American cuisine, an evolving style of cooking built on classical French technique with regional American ingredients. His restaurants are known to incorporate his style and still remain unique.
Charlie Palmer Steak at the Four Seasons Las Vegas offers generous portions, robust flavors and bold wines in a relaxing clubhouse atmosphere.
Through September 18, Chef de Cuisine Stephen Blandino offers a special Cut of the Week three-course prix fixe menu, which includes a unique cut of beef paired with seasonal ingredients and a bottomless glass of wine pairings for $48 per person.
Regular a la carte menu items include dishes like Charcoal Grilled Filet Mignon in Roasted Shallot Jus, a 28-day-aged Bone in Rib-Eye, as well as poultry and seafood selections. Two choices feature Fire-Roasted Sonoma Chicken with Parmesan Gnocchi, Rosemary Jus or Crispy Skinned Australian Sea Bass with Cannelloni Beans and Fragrant Basil. Chef Palmer’s famous side dishes, including some of his signature potato creations such as Truffle Baked Potato, CP Steak Fries and Yukon Gold Potato Purée, compliment to any entrée choice. Dessert, which completes the meal, offers Tangerine Grand Marnier Crème Brûlée, Cinnamon Raisin Biscotti or Summer Fruit Crisp with Lemon Tart ice cream.
The wine list specializes in Napa Valley Cabernet and Pinot Noir producers from the West Coast as well as old world wines from the Rhone Valley, Bordeaux, Burgundy, Spain, Germany and Italy.
The dining room is spacious with secluded seating options as well as private dining rooms. The lounge features deep couches and overstuffed club chairs for drinks and informal dining. This is a true American steakhouse.
Hours are Tuesday through Saturday, 5:30 p.m. to 10:30 p.m. Call or make reservations online.
